Job description: A 4* international brand hotel with over 200 rooms seeks to employ an experienced Executive Sous Chef with the following ESSENTIAL REQUIREMENTS!

• Matric
• Professional Cookery Diploma with HACCP knowledge
• Must have 5 years experience within a 4 or 5 * hotel with banqueting for at least 1000 pax, the proeprty has over 10 banquet venues and can serve up to 1500 pax.
• Knowledge of costing, controls are a must, must be able to oversee multi-outlets
• Must currently be holding the position of Exec Sous in a 4 or 5 * Hotel environment
• Strong on banqueting
• Good staff management skills be able to mange costs and controls
• Own car and license will be a distinct advantage
• Responsibilities include: Write SOPs for every product and service that leaves the kitchen and then be diligent on the execution of all SOP’s. You need to be the example.
• Submit monthly stocktakes on food and operational equipment.
• Achieve food cost monthly
• Work hand in hand with the Executive Chef to manage all areas of the kitchen
• Assist with development of the chefs through a skills assessment and then a structured “on job training” program.
